Ingredients
- 4 bone-in, skin-on chicken thighs (or breasts)
- 1.5 lbs baby potatoes (red or gold), halved
- 4 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 tbsp Italian seasoning
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chicken broth or water
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the sauce: In a small bowl, mix minced garlic, Parmesan cheese, olive oil, Italian seasoning, paprika, salt, and pepper.
- Layer potatoes: Place the halved potatoes in the bottom of the slow cooker. Pour the chicken broth over them.
- Add chicken: Place the chicken thighs on top of the potatoes.
- Coat chicken: Spoon the Parmesan garlic mixture evenly over the chicken thighs, spreading it on top and under the skin if possible.
