Ingredients

  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • Salt and black pepper, to taste
  • 6 cups fresh spinach
  • Optional: red pepper flakes, grated Parmesan

Instructions

  1. Preheat oven to 400°F (205°C).
  2. Place salmon on a lined baking sheet; drizzle with olive oil, lemon juice, zest, salt, and pepper.
  3. Bake 12–15 minutes, until salmon flakes easily.
