Ingredients

  • 4–6 bone-in or boneless chicken thighs or breasts
  • 2 tbsp olive oil or butter
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2½ cups chicken broth
  • ½ cup heavy cream
  • Optional: chopped parsley for garnish

Instructions

  1. Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat oil in a large skillet or Dutch oven over medium heat. Brown chicken on both sides; remove and set aside.
  3. In the same pan, sauté onion until soft, then add garlic.
  4. Stir in rice and toast for 1 minute.
  5. Add chicken broth and heavy cream; stir to combine.
  6. Nestle chicken back into the pan. Cover and simmer 25–30 minutes, until rice is tender and chicken is cooked through.
  7. Rest 5 minutes, garnish, and serve.
