Ingredients

Chicken & Marinade:

1½ lbs boneless, skinless chicken thighs or breasts, cut into 1½-inch pieces

⅓ cup honey

Zest and juice of 2 limes

2 tablespoons olive oil

2 cloves garlic, minced

1–2 teaspoons chili flakes (adjust to heat preference)

1 teaspoon smoked paprika

½ teaspoon ground cumin

¾ teaspoon salt

½ teaspoon black pepper

Optional Garnish:

Fresh cilantro, chopped

Extra lime wedges

Drizzle of warm honey
Instructions
- In a large bowl, whisk together the honey, lime zest, lime juice, olive oil, garlic, chili flakes, smoked paprika, cumin, salt, and pepper.
- Add the chicken pieces and toss until well coated. Cover and marinate for at least 30 minutes (up to 2 hours for more flavor).
- If using wooden skewers, soak them in water for 30 minutes.
- Preheat a grill or grill pan to medium-high heat. Lightly oil the grates.
- Thread the marinated chicken onto skewers, shaking off excess marinade.
- Grill for 10–12 minutes, turning every 2–3 minutes, until the chicken is fully cooked and lightly charred (internal temperature of 165°F / 74°C).
- Remove from the grill and rest for 2–3 minutes.
- Garnish with chopped cilantro, a squeeze of fresh lime, and a drizzle of warm honey if desired.
Notes
- Chicken thighs stay juicier, but breasts work great if you don’t overcook them.
- Want more heat? Add sriracha, chili paste, or cayenne to the marinade.
- These skewers also cook beautifully in an air fryer (400°F / 205°C for 8–10 minutes) or oven broiler.
- Serve with cilantro-lime rice, grilled veggies, or a fresh cucumber salad.
