Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream the butter and sugar until light and fluffy.
- Add the eggs, one at a time, mixing well. Stir in the vanilla extract.
- Alternately add the dry ingredients and milk, beginning and ending with the dry ingredients. Mix just until combined.
- Divide batter evenly among liners, filling each about ⅔ full.
- Bake for 18–20 minutes, or until a toothpick inserted comes out clean. Cool completely.
- Mix the cooled coffee with the coffee liqueur (if using). Lightly brush or spoon the coffee soak over each cupcake.
- For the frosting, whip the heavy cream to soft peaks.
- In a separate bowl, gently mix mascarpone, powdered sugar, and vanilla until smooth. Fold in the whipped cream.
- Frost cupcakes generously using a piping bag or spatula.
- Dust with cocoa powder and garnish with chocolate shavings if desired.
Notes
- Don’t over-soak the cupcakes—just enough coffee to flavor without making them soggy.
- Keep mascarpone cold to prevent the frosting from becoming runny.
- These cupcakes taste even better after chilling for 1–2 hours.
- For an alcohol-free version, skip the liqueur and use vanilla-flavored coffee.
