Instructions
- Lightly grease the crockpot. Add halved potatoes to the bottom.
- Season potatoes with olive oil, salt, pepper, Italian seasoning, and paprika. Toss to coat.
- Place chicken on top of the potatoes and season lightly with salt and pepper.
- In a bowl, whisk together chicken broth, heavy cream, Parmesan, garlic, and melted butter. Pour evenly over chicken and potatoes.
- Cover and cook on LOW for 6 hours or HIGH for 3–4 hours, until chicken is tender and potatoes are fork-tender.
- If a thicker sauce is desired, mix cornstarch with 1 tablespoon water, stir into the crockpot, and cook on HIGH for 15–20 minutes.
- Taste and adjust seasoning. Garnish with parsley and extra Parmesan before serving.

- Chicken thighs stay extra juicy, but breasts work great too.
- For crispier potatoes, broil them on a sheet pan for 5 minutes after cooking.
- Add green beans or carrots during the last hour for a complete meal.
