Instructions
- Preheat oven to 400°F (205°C). Lightly grease or line a baking sheet with parchment paper.
- Pound chicken breasts to an even thickness and season lightly with salt and pepper.
- In a shallow bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
- In another bowl, whisk the eggs.
- Dip each chicken breast into the eggs, then press firmly into the Parmesan breadcrumb mixture until well coated.
- Place chicken on the baking sheet and drizzle with olive oil or melted butter.
- Bake for 20–25 minutes, or until the coating is golden and the chicken reaches an internal temperature of 165°F (74°C).
- For extra crispiness, broil for the last 1–2 minutes.
- Garnish with parsley and serve with lemon wedges if desired.
