Ingredients

  • 1 lb ground turkey or ground chicken
  • 1 tablespoon sesame oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 cups green cabbage, thinly sliced
  • 1 cup shredded carrots
  • 6 cups chicken broth
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon rice vinegar
  • ½ teaspoon white pepper (or black pepper)
  • ¼ teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced
  • Optional toppings: sesame seeds, chili crisp, sriracha

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add ground chicken and cook until browned, breaking it apart as it cooks.
  2. Stir in onion, garlic, and ginger. Cook for 2–3 minutes until fragrant.
  3. Add cabbage and carrots. Cook for 3–4 minutes until slightly softened.
  4. Pour in chicken broth, soy sauce, rice vinegar, white pepper, and red pepper flakes.
  5. Bring to a gentle boil, then reduce heat and simmer for 15 minutes.
  6. Taste and adjust seasoning as needed.
  7. Ladle into bowls and top with green onions and desired garnishes.
