Chicken:

1½ lbs boneless, skinless chicken thighs or breasts

1 tablespoon olive oil

½ cup raspberry preserves

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1–2 jalapeños, finely diced (seeds removed for less heat)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated (optional)

½ teaspoon crushed red pepper flakes (optional)

Garnish (Optional):

Fresh cilantro or parsley

Instructions
- Season chicken on both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5–6 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, reduce heat to medium. Add raspberry preserves, soy sauce, apple cider vinegar, jalapeños, garlic, ginger, and red pepper flakes.
- Simmer sauce for 3–5 minutes, stirring, until slightly thickened and glossy.
- Return chicken to the skillet and spoon sauce over the top. Simmer for 2–3 minutes, flipping once, until chicken is fully coated.
- Garnish and serve warm.
Notes
- Chicken thighs stay juicier, but breasts work great too.
- Adjust heat by changing jalapeño amount or adding extra chili flakes.
- For a grilled version, brush sauce on during the last few minutes of grilling.
- Swap raspberry for blackberry or strawberry preserves if needed.
