Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup finely diced apple (peeled; Granny Smith or Honeycrisp)
  • Optional add-ins:
  • ¼ cup chopped walnuts or pecans
  • ½ cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in egg and vanilla until combined.
  4. In a separate bowl, whisk together flour, cinnamon, baking soda, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in diced apples and any optional add-ins.
  7. Scoop dough onto prepared baking sheets, spacing cookies about 2 inches apart.
  8. Bake for 12–14 minutes, until edges are set and tops are lightly golden.
  9. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Dice apples very small to prevent excess moisture.
  • For extra cinnamon flavor, sprinkle tops with cinnamon sugar before baking.
  • Cookies will be soft—don’t overbake.
  • Store in an airtight container for up to 3 days.
