Ingredients
- ⅓ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tbsp sriracha (to taste)
- Fried Rice
- 3 cups cooked, cold rice
- 2 tbsp vegetable or sesame oil
- 2 eggs, beaten
- 1 lb shrimp or chicken, diced
- 1 cup frozen peas and carrots
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tsp rice vinegar or lime juice
- Green onions, sliced (for garnish)
Instructions
- Whisk together Bang Bang sauce ingredients; set aside.
- Heat oil in a large skillet or wok over medium-high heat. Scramble eggs, remove, and set aside.
- Add protein to skillet and cook until done; remove.
- Add more oil if needed, then sauté garlic and vegetables for 1–2 minutes.
- Stir in rice and soy sauce; cook until heated through and slightly crispy.
- Return eggs and protein to skillet. Toss with Bang Bang sauce and vinegar/lime juice.
- Garnish with green onions and serve immediately.

- Cold rice works best for texture.
