Mozzarella and Pesto Panini

This Mozzarella and Pesto Panini is fresh, melty, and full of classic Italian flavor. Creamy mozzarella melts perfectly between slices of crispy, golden bread, while vibrant basil pesto adds a rich, herby bite.

Ingredients

  • 4 slices ciabatta or sourdough bread
  • 6 oz fresh mozzarella, sliced
  • ¼ cup basil pesto
  • 2 tablespoons butter or olive oil
  • Optional add-ins:
  • Sliced tomatoes
  • Prosciutto
  • Roasted red peppers

Instructions

  1. Preheat a panini press or skillet over medium heat.
  2. Spread pesto evenly on the inside of each slice of bread.
  3. Layer mozzarella (and any optional add-ins) on two slices of bread.
  4. Top with remaining bread slices, pesto-side down.
  5. Brush the outside of the bread with butter or olive oil.
  6. Grill in a panini press for 6–8 minutes, or cook in a skillet, pressing with a spatula and flipping once, until bread is golden and cheese is melted.
  7. Remove from heat, slice, and serve warm.

Notes

  • Fresh mozzarella gives the best melt and flavor.
  • If using tomatoes, pat them dry to avoid soggy bread.
  • Add a pinch of red pepper flakes for heat.
  • Serve immediately for best texture.
  • Works great in an air fryer (375°F for 4–5 minutes).
