Grilled Chickpeas & Veggies:

1 can (15 oz) chickpeas, drained, rinsed, and patted dry

1 red bell pepper, sliced

1 zucchini, sliced

½ red onion, sliced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon garlic powder

Salt and black pepper, to taste

Pitas & Toppings:

4 pita breads

½ cup hummus or tzatziki
-
½ cup cherry tomatoes, halved
-
¼ cup crumbled feta cheese (optional)

Fresh parsley or cilantro, chopped
Instructions
- Preheat a grill pan or outdoor grill to medium-high heat.
- In a large bowl, toss chickpeas, bell pepper, zucchini, and red onion with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
- Grill vegetables and chickpeas in a grill basket or on skewers for 8–10 minutes, turning occasionally, until lightly charred.
- Warm pita breads on the grill for 30–60 seconds per side.
- Spread hummus or tzatziki inside each pita.
- Fill with grilled chickpea veggie mixture.
- Top with tomatoes, feta, and fresh herbs.
- Serve warm.
Notes
- No grill? Roast everything at 425°F (220°C) for 20 minutes instead.
- Add harissa or chili sauce for heat.
- Make it vegan by skipping feta or using dairy-free sauce.
- Works beautifully in wraps or bowls, too.
