  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Healthy Bang Bang Sauce:
  • ½ cup plain Greek yogurt
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon honey (optional)
  • 1 teaspoon lime juice
  • Bowl Base:
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 2 cups shredded cabbage or coleslaw mix
  • 1 cup shredded carrots
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • Garnish (Optional):
  • Green onions, sliced
  • Sesame seeds
  • Fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and season with garlic powder, paprika, salt, and pepper.
  2. Cook chicken for 6–8 minutes, stirring occasionally, until golden and cooked through.
  3. In a small bowl, whisk together Greek yogurt, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  4. Assemble bowls by dividing rice (or chosen base) among serving bowls.
  5. Top with cabbage, carrots, cucumber, avocado, and cooked chicken.
  6. Drizzle with bang bang sauce and garnish as desired.
  7. Serve immediately.

Notes

  • Air fry chicken at 400°F (205°C) for 10–12 minutes for a crispier texture.
  • Swap Greek yogurt for light mayo for a more traditional flavor.
  • Add edamame or roasted broccoli for extra nutrients.
  • Keep sauce separate if meal prepping to maintain freshness.
