Ingredients
- 1 lb large shrimp, peeled and deveined
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp cornstarch
- 1 tbsp neutral oil
- 1½ cups pineapple chunks (fresh or canned, drained)
- ⅓ cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- Optional garnish: sliced scallions, sesame seeds, cilantro
Instructions
- Toss shrimp with salt, pepper, and cornstarch.
- Heat oil in a large skillet over medium-high. Sear shrimp 1–2 minutes per side until just cooked. Remove and set aside.
- In the same skillet, add pineapple and cook 2–3 minutes until lightly caramelized.
- Stir in sweet chili sauce, soy sauce, vinegar or lime, ginger, and garlic. Simmer 2 minutes.
- Return shrimp to pan and toss until glazed and heated through.
- Garnish and serve immediately.

- Pat shrimp dry for the best sear.
