  • 1 (14.5 oz) can diced tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • 1 cup heavy cream
  • 1 (20 oz) package refrigerated cheese tortellini
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese

Instructions

  1. Sauté the Base
    Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 3–4 minutes. Stir in garlic and cook for 30 seconds.
  2. Brown the Sausage
    Add Italian sausage, breaking it up as it cooks, until browned and fully cooked. Drain excess grease if needed.
  3. Simmer the Soup
    Stir in chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a gentle boil.
  4. Add Tortellini
    Reduce heat to medium and add tortellini. Cook according to package directions, usually 5–7 minutes.
  5. Make It Creamy
    Lower heat and stir in heavy cream, spinach, and Parmesan cheese. Simmer 2–3 minutes until spinach wilts and soup is creamy.
  6. Serve
    Taste and adjust seasoning. Serve hot with extra Parmesan if desired.
