  • Mashed Potatoes:
  • 2 lbs russet or Yukon gold potatoes, peeled and cubed
  • ½ cup milk or cream
  • 4 tablespoons unsalted butter
  • Salt and pepper, to taste

Instructions

Make the Mashed Potatoes

  1. Place potatoes in a large pot and cover with salted water. Bring to a boil.
  2. Cook for 15–18 minutes until fork-tender. Drain well.
  3. Mash with butter and milk until smooth. Season with salt and pepper. Cover to keep warm.

Cook the Chicken

  1. Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken 5–6 minutes per side until golden and cooked through. Remove and set aside.

Make the Creamy Herb Sauce

  1. In the same skillet, add garlic and cook for 30 seconds.
