Ingredients

  • 12 oz pasta (penne, rotini, or shells)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breast, cubed
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 cloves garlic, minced
  • ¾ cup buffalo wing sauce
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons butter
  • 2 tablespoons chopped green onions or parsley (optional)

Instructions

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Cook the Chicken
    Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, paprika, and garlic powder. Cook 5–6 minutes until browned and cooked through. Remove and set aside.
  3. Make the Sauce
    In the same skillet, melt butter and sauté garlic for 30 seconds. Stir in buffalo sauce, chicken broth, and heavy cream. Simmer 3–4 minutes.
  4. Add the Cheese
    Reduce heat to low. Stir in Parmesan and mozzarella until melted and smooth.
  5. Combine Everything
    Return chicken to skillet along with cooked pasta. Toss to coat evenly. Add red pepper flakes if desired.
  6. Serve
    Garnish with green onions or parsley and serve warm.
