Ingredients
- 1 cup unsalted butter, softened
- ¾ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1¾ cups all-purpose flour
- 1 tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp salt
- 3 cups old-fashioned rolled oats
- 1½ cups finely diced apple (peeled; Honeycrisp or Granny Smith work well)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- Cream butter and sugars until light and fluffy.
- Beat in eggs and vanilla.
- Whisk flour, baking soda, cinnamon, and salt; mix into wet ingredients.
- Fold in oats and diced apples.
- Scoop 2-tbsp portions onto baking sheets, spacing 2 inches apart.
- Bake 10–12 minutes, until edges are set and centers look soft.
- Cool 5 minutes on the pan, then transfer to a rack.

- Dice apples small to avoid excess moisture.
- Add ½ cup chopped walnuts or raisins if you’re feeling it.
