Ingredients

  • 1 lb pasta (penne or rotini work well)

  • 1 lb boneless, skinless chicken breast, sliced
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated parmesan
  • ½ cup sun-dried tomatoes, sliced
  • 1 cup fresh spinach
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook pasta according to package directions; reserve ½ cup pasta water and drain.
  2. Heat olive oil in a large skillet. Season and cook chicken 5–6 minutes until golden; remove.
  3. In the same skillet, sauté garlic, Italian seasoning, and paprika for 30 seconds.
  4. Add broth and cream, simmer 3–4 minutes. Stir in parmesan until smooth.
  5. Return chicken to skillet with sun-dried tomatoes and spinach. Cook until spinach wilts.
  6. Toss in pasta, adding reserved pasta water as needed. Garnish and serve.
