Ingredients

  • 4 large flour tortillas
  • 1½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni (or sliced regular pepperoni)
  • ½ cup pizza sauce or marinara
  • ¼ teaspoon Italian seasoning
  • 2 tablespoons butter or olive oil
  • Optional toppings: sliced olives, mushrooms, bell peppers
  • Optional for serving: extra pizza sauce for dipping

Instructions

  1. Assemble the Quesadillas
    Lay tortillas flat. Sprinkle mozzarella over half of each tortilla. Add pepperoni, optional toppings, and a pinch of Italian seasoning. Drizzle a little pizza sauce over the filling (don’t overdo it).
  2. Fold
    Fold tortillas in half to form quesadillas.
  3. Cook Until Crispy
    Heat butter or olive oil in a skillet over medium heat. Cook quesadillas 2–3 minutes per side until golden brown and cheese is melted.
  4. Slice and Serve
    Remove from skillet, rest 1 minute, then slice into wedges. Serve with warm pizza sauce for dipping.
