Ingredients

  • 12 oz pasta (penne, fettuccine, or linguine)
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1½ teaspoons Cajun seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt (adjust if Cajun seasoning is salty)
  • ¼ teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ¾ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Cook the Pasta
Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  2. Season and Cook the Shrimp
Toss shrimp with Cajun seasoning, paprika, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink and opaque. Remove and set aside.
  3. Make the Sauce
In the same skillet, melt butter. Add garlic and sauté for 30 seconds.
Stir in chicken broth and heavy cream. Bring to a gentle simmer.
  4. Add Cheese
Reduce heat and stir in Parmesan cheese and red pepper flakes until smooth and slightly thickened.
  5. Combine Everything
Add pasta and shrimp back to skillet. Toss to coat, adding reserved pasta water if needed.
  6. Serve
Garnish with parsley and serve hot.

Notes

  • Don’t overcook shrimp—they stay tender when cooked just until pink.
  • Use low-sodium Cajun seasoning if possible.
  • Add bell peppers or spinach for extra color and nutrition.
  • Sauce thickens as it rests—loosen with cream or broth when reheating.
  • Great with garlic bread or a simple green salad.
