Sweet Potato Black Bean Quesadillas

Ingredients
- 2 medium sweet potatoes, peeled and diced (about 3 cups)
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 1 (15 oz) can black beans, drained and rinsed
- ½ cup finely diced red onion
- 1 cup shredded Monterey Jack or Mexican-blend cheese
- 4 large flour tortillas
- Butter or oil for cooking
- Optional for serving
- Salsa, guacamole, sour cream, fresh cilantro, lime wedges
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, until tender.
- In a bowl, lightly mash half of the roasted sweet potatoes. Stir in black beans and red onion to combine.
- Heat a large skillet over medium heat and lightly grease with butter or oil.
- Place one tortilla in the skillet. Spread ¼ of the filling over half the tortilla. Sprinkle with cheese. Fold the tortilla over.
- Cook 2–3 minutes per side until golden brown and cheese is melted.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm with desired toppings.

- For a vegan version, use dairy-free cheese.
