Ingredients

  • 6 large eggs
  • ½ cup milk (whole or 2%)
  • ½ cup heavy cream (or substitute more milk)
  • 1 cup fresh spinach, finely chopped
  • ½ cup shredded cheese (cheddar, mozzarella, or Swiss)
  • ¼ cup feta cheese, crumbled (optional)
  • 2 tablespoons onion, finely diced
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat Oven
    Preheat to 375°F (190°C). Grease a 12-cup muffin tin well.
  2. Prepare Spinach
    If using fresh spinach, sauté briefly until wilted and remove excess moisture.
  3. Mix Egg Base
    In a large bowl, whisk together eggs, milk, cream, salt, pepper, and nutmeg.

  6. Bake
    Bake for 18–22 minutes, until centers are set and tops are lightly golden.

    Let cool 5 minutes before removing from pan.
