Place sliced onions and garlic in the bottom of the slow cooker. Add the seared roast on top.

Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
Remove roast and shred with two forks. Return shredded beef to the slow cooker and let it soak in the juices for 15–20 minutes.
Toast rolls lightly. Fill with shredded beef and top with cheese. Broil for 1–2 minutes until cheese melts.
