Ingredients
To make this dish, you’ll need:
- 2 chicken breasts or thighs, diced
- 2 eggs
- 2 cups of cooked rice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 carrot, julienned
- 1 bell pepper, sliced
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Preparation
Begin by cooking the rice according to package instructions. While the rice is cooking, prepare the chicken by dicing it into bite-sized pieces. Julienne the carrot, slice the bell pepper, and chop the green onions. Mince the garlic and ginger.
Cooking the Chicken
In a bowl, marinate the diced chicken with soy sauce, sesame oil, minced garlic, and ginger for about 15 minutes. Heat a large skillet or wok over medium-high heat and add a bit of oil. Stir-fry the chicken until fully cooked and browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Making the Egg Topping
In the same skillet, scramble the eggs until just set. Season with a pinch of salt and pepper. Remove from the skillet and set aside.
Combining Ingredients
In the skillet, add a bit more oil if needed and stir-fry the julienned carrot and sliced bell pepper until tender. Add the cooked rice to the vegetables and stir to combine. Return the cooked chicken to the skillet and mix everything together. Top with scrambled eggs.
Presentation
Serve the chicken & egg rice bowl hot, garnished with chopped green onions and sesame seeds for a touch of freshness and crunch. Pair with a side of soy sauce or sriracha for extra flavor.
Health Benefits
This dish is packed with protein from the chicken and eggs, and the fresh vegetables provide essential vitamins and minerals. The combination of rice and protein makes it a balanced and satisfying meal.
Variations
For a spicy kick, add some chili flakes or sriracha to the chicken marinade. For a teriyaki twist, use teriyaki sauce instead of soy sauce in the marinade and drizzle some over the finished bowl.
Tips for Success
Ensure the chicken is cooked thoroughly by using a meat thermometer to check that it reaches an internal temperature of 165°F (74°C). Cook the rice perfectly by following package instructions and fluffing it with a fork before serving.
