Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla until combined.
- In a separate bowl, whisk together flour, cinnamon, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Fold in diced apples and any optional add-ins.
- Scoop dough onto prepared baking sheets, spacing cookies about 2 inches apart.
- Bake for 12–14 minutes, until edges are set and tops are lightly golden.
