Ingredients

  • Crust
  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ teaspoon salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
  • Cheesecake Layer
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Apple Filling
  • 3 cups apples, peeled and diced (Granny Smith or Honeycrisp)
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Crumble Topping
  • 1 cup old-fashioned oats
  • ½ cup brown sugar
  • ½ cup all-purpose flour
  • ½ teaspoon cinnamon
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat oven
    Preheat to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. Make the crust
    Mix flour, sugar, and salt. Cut in cold butter until crumbly. Press firmly into the pan and bake 12–15 minutes, until lightly golden.
  3. Prepare cheesecake layer
    Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Spread evenly over warm crust.
  4. Prepare apple layer
    Toss apples with brown sugar, lemon juice, cinnamon, and nutmeg. Spoon evenly over cheesecake.
  5. Make crumble topping
    Combine oats, brown sugar, flour, cinnamon, and melted butter until crumbly. Sprinkle evenly over apples.
  6. Bake
    Bake 45–50 minutes, until top is golden and center is set.
  7. Cool & slice
    Cool completely, then chill at least 2 hours before slicing for clean bars.

Notes

  • Best apples: Granny Smith for tartness, Honeycrisp for sweetness—mixing both is chef’s kiss.
  • Clean cuts: Wipe knife between slices and cut chilled bars.
