Ingredients
To make this dish, you’ll need:
- 2 chicken breasts or thighs, diced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 onion, finely chopped
- 2 tablespoons tomato paste
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Preparation
Begin by dicing the chicken into bite-sized pieces. Finely chop the onion and mince the garlic. Gather all your ingredients before you start cooking.
Cooking the Chicken
Heat a large skillet over medium-high heat and add the olive oil. Add the diced chicken and sear until it is browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Making the Sauce
In the same skillet, add a bit more olive oil if needed and sauté the minced garlic and chopped onion until they are fragrant and translucent, about 3-4 minutes. Stir in the tomato paste and cook for another minute. Add the diced tomatoes and chicken broth, stirring to combine. Season the sauce with dried basil, oregano, thyme, salt, and pepper.
Combining Chicken and Sauce
Return the seared chicken to the skillet, ensuring it is submerged in the sauce. Reduce the heat to low and let the mixture simmer for about 20-25 minutes, or until the chicken is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
Serving Suggestions
Serve Azzaunty’s Chicken Sauce hot over your favorite pasta, rice, or vegetables. Garnish with fresh herbs like parsley or basil for a burst of color and flavor. A side of crusty bread is perfect for mopping up any extra sauce.
