Ingredients

  • ⅓ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1–2 tbsp sriracha (to taste)
  • Fried Rice
  • 3 cups cooked, cold rice
  • 2 tbsp vegetable or sesame oil
  • 2 eggs, beaten
  • 1 lb shrimp or chicken, diced
  • 1 cup frozen peas and carrots
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tsp rice vinegar or lime juice
  • Green onions, sliced (for garnish)

Instructions

  1. Whisk together Bang Bang sauce ingredients; set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Scramble eggs, remove, and set aside.
  3. Add protein to skillet and cook until done; remove.
  4. Add more oil if needed, then sauté garlic and vegetables for 1–2 minutes.
  5. Stir in rice and soy sauce; cook until heated through and slightly crispy.
  6. Return eggs and protein to skillet. Toss with Bang Bang sauce and vinegar/lime juice.
  7. Garnish with green onions and serve immediately.

Notes

  • Cold rice works best for texture.
