2 flatbreads or naan breads

1½ cups cooked chicken, shredded or diced

½ cup BBQ sauce, plus more for drizzling

Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, toss the cooked chicken with BBQ sauce until well coated.
- Place the flatbreads on the prepared baking sheet. Spread a thin layer of BBQ sauce over each flatbread.
- Evenly distribute the BBQ chicken over the flatbreads.
- Sprinkle with mozzarella and smoked Gouda (or cheddar).
- Add red onion and optional jalapeños or red pepper flakes.
