Ingredients

  • Meatloaf:
  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs or crushed Ritz crackers
  • 2 large eggs
  • ½ cup milk
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • BBQ Glaze:
  • ½ cup BBQ sauce
  • 2 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the Smoker
    Preheat smoker to 225°F (107°C). Use hickory, apple, or cherry wood.
  2. Prepare the Meatloaf Mixture
    In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, salt, pepper, smoked paprika, onion powder, and garlic powder. Mix gently until just combined.
  3. Shape the Meatloaf
    Form mixture into a loaf shape on a parchment-lined tray or directly on a grill-safe rack.
  4. Smoke the Meatloaf
    Place meatloaf in the smoker. Smoke uncovered for 1½ hours.
  5. Add the Glaze
    In a small bowl, mix BBQ sauce, ketchup, brown sugar, and apple cider vinegar. Brush generously over meatloaf.
  6. Finish Smoking
    Continue smoking for 30–60 minutes, until internal temperature reaches 160°F (71°C).
  7. Rest and Slice
    Remove meatloaf from smoker and rest for 10 minutes before slicing.

Notes

  • Use 80/20 beef for best moisture and flavor.
  • Don’t overmix to avoid dense meatloaf.
  • If smoker runs hot, tent loosely with foil.
  • Can be finished at higher heat (275°F) for a firmer crust.
  • Great leftovers for meatloaf sandwiches.
