Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs), diced
  • 2 teaspoons Cajun seasoning (plus more to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • Optional: red pepper flakes, lemon wedges

Instructions

  1. Season the chicken with Cajun seasoning, salt, and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook 5–6 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, sauté onion and bell pepper for 3–4 minutes until softened. Add garlic and cook 30 seconds.
  4. Stir in orzo and toast for 1–2 minutes.
  5. Pour in chicken broth and cream. Add smoked paprika. Bring to a gentle simmer.
  6. Reduce heat to medium-low and cook 8–10 minutes, stirring occasionally, until orzo is tender.
  7. Stir in Parmesan and return chicken to the skillet. Simmer 2–3 minutes until heated through.
  8. Garnish with parsley and serve warm.
