Ingredients

  • 1 pound boneless, skinless chicken breasts or thighs, diced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup salsa
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste
  • Fresh cilantro, optional garnish

Instructions

1. Cook the Chicken

Heat olive oil in a large skillet over medium heat. Add diced chicken and cook for 5–6 minutes until lightly browned. Remove and set aside.

2. Sauté Aromatics

In the same skillet, add onion and cook until softened, about 3 minutes. Stir in garlic and cook for 30 seconds.

3. Add Rice and Seasoning

Stir in taco seasoning and uncooked rice. Toast for 1 minute.

4. Simmer

Add chicken broth, salsa, corn, and black beans. Return chicken to the skillet. Stir well.
Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.

Sprinkle shredded cheese over the top. Cover and let sit for 2–3 minutes until melted.

6. Serve
