Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 1 teaspoon fresh thyme (or ½ tsp dried)
  • Salt and black pepper, to taste
  • Optional garnish: fresh parsley or thyme

Instructions

  1. Season the Chicken
Season chicken on both sides with salt and black pepper.
  2. Sear
Heat olive oil and butter in a large skillet over medium-high heat.
Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
  3. Make the Sauce
In the same skillet, add garlic and sauté for 30 seconds until fragrant.
Pour in chicken broth, scraping up browned bits.
  4. Creamy Mustard Magic
Stir in heavy cream, Dijon mustard, whole-grain mustard, and thyme.
Simmer 3–5 minutes until slightly thickened.
  5. Finish Cooking
Return chicken to the skillet. Reduce heat to medium-low and simmer
8–10 minutes, until chicken is cooked through and sauce is creamy.
  6. Serve
Spoon sauce over chicken and garnish with herbs.

Notes

  • Thighs = Extra Juicy: Chicken thighs work beautifully here.
  • Lighter Option: Swap heavy cream for half-and-half or Greek yogurt (low heat).
  • Serving Ideas: Mashed potatoes, rice, egg noodles, or roasted veggies.

This Chicken with Creamy Mustard is rich, tangy, and comforting with a touch of elegance. Tender chicken is simmered in a smooth, creamy mustard sauce that balances sharp flavor with velvety texture.
