Ingredients

  • Banana Bread
  • 3 ripe bananas, mashed
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • ¼ cup sour cream (or Greek yogurt)
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • Cinnamon Crunch Topping
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold butter, cubed
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan.
  2. In a large bowl, mix mashed bananas and melted butter.
  3. Stir in brown sugar, eggs, sour cream, and vanilla until smooth.
  4. Add flour, baking soda, salt, and cinnamon. Stir just until combined.
  5. Pour batter into prepared pan.
Make topping: Combine sugar, cinnamon, flour, and butter. Cut together with a fork until crumbly.
  6. Sprinkle evenly over batter.
  7. Bake 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas (deep yellow with brown spots) for best flavor.
  • Do not overmix the batter; it can make the bread dense.

This Cinnamon Crunch Banana Bread is soft, moist, and packed with rich banana flavor, finished with a buttery cinnamon-sugar crumble that bakes into a crisp, golden topping. Ripe bananas add natural sweetness and tenderness, while brown sugar brings a subtle caramel depth. A touch of sour cream keeps the crumb extra soft and bakery-style moist. The real star is the cinnamon crunch layer—made with sugar, cinnamon, and butter—that creates a delicate crackly crust on top of the loaf. Each slice delivers the perfect contrast: fluffy, tender bread beneath a sweet, slightly crisp topping. It’s ideal for breakfast, brunch, or an afternoon coffee break. This recipe is simple to make, requires no mixer, and uses pantry staples. Whether served warm with a pat of butter or enjoyed as-is, this comforting loaf feels homemade, cozy, and just a little bit indulgent.
