Ingredients
- Oat Base
- 1 ½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ¾ cup brown sugar

- ¼ cup unsalted butter, softened
- ⅓ cup brown sugar
- 1 tablespoon ground cinnamon
- Vanilla Glaze
- ¾ cup powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- Make oat base:
In a bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon. Stir in melted butter, egg, and vanilla until combined. - Press about ⅔ of the mixture evenly into the prepared pan.
- Make cinnamon swirl:
Mix softened butter, brown sugar, and cinnamon until smooth. Spread evenly over the base. - Crumble remaining oat mixture over the top.
- Bake 25–30 minutes, until golden brown.
- Cool completely before drizzling with glaze.
- Make glaze:
Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bars, slice, and serve.
Notes
- For thicker bars, use a smaller pan (7x7-inch) and add 3–5 minutes baking time.
- Do not overbake; bars should be set but slightly soft in the center.
