Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2½ cups chicken broth
  • 1 cup milk or half-and-half
  • 2 cups broccoli florets, chopped
  • 1½ cups shredded cheddar or Monterey Jack cheese
  • Salt and black pepper, to taste
  • Optional: red pepper flakes, Parmesan

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season and cook chicken until browned; remove and set aside.
  2. In the same pan, sauté garlic briefly. Stir in orzo and toast 1 minute.
  3. Add broth and milk; bring to a simmer. Cook, stirring, until orzo is tender.
  4. Add broccoli and cooked chicken; simmer 3–4 minutes until broccoli is tender.
  5. Stir in cheese until melted and creamy. Adjust seasoning and serve.
