Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain.
Toss shrimp with paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink and opaque. Remove and set aside.
In the same skillet, add garlic and sauté for 30 seconds. Stir in sun-dried tomatoes and cook 1 minute.
Pour in chicken broth and heavy cream. Bring to a gentle simmer. Stir in Parmesan, Italian seasoning, and red pepper flakes. Simmer 3–5 minutes until thickened.
Add cooked pasta and shrimp back to the skillet. Toss to coat, adding reserved pasta water as needed.
