Ingredients

1½ lbs boneless, skinless chicken thighs (or breasts), cut into chunks

¾ cup low-sodium soy sauce

½ cup brown sugar, packed

¼ cup ketchup

¼ cup bourbon

2 tablespoons apple cider vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh ginger, grated (or ½ tsp ground)

½ teaspoon black pepper

Instructions
- Place the chicken pieces in the bottom of the crock pot.
- In a bowl, whisk together soy sauce, brown sugar, ketchup, bourbon, apple cider vinegar, honey, garlic, ginger, black pepper, and red pepper flakes.
- Pour the sauce over the chicken and stir to coat.
- Cover and cook on LOW for 6–7 hours or HIGH for 4 hours, until chicken is tender and fully cooked.
- If a thicker sauce is desired, whisk cornstarch and water together. Stir into the crock pot during the last 30 minutes of cooking and cover again.
- Once thickened, stir well and taste, adjusting sweetness or salt if needed.
- Serve hot over steamed rice, garnished with green onions and sesame seeds.
Notes
- Chicken thighs stay extra juicy, but breasts work fine if not overcooked.
- The alcohol cooks off, leaving just the bourbon flavor.
- For deeper flavor, briefly sear the chicken before slow cooking (optional).
- Add steamed broccoli or bell peppers during the last hour for a full meal.
