Crock Pot Huli Huli Chicken is a slow-cooker take on the classic Hawaiian favorite—sweet, savory, and irresistibly sticky. The chicken cooks low and slow in a pineapple-soy glaze until tender, then gets finished with a glossy sauce that’s perfect over rice or tucked into sliders. Easy, tropical, and crowd-pleasing.

Ingredients

  • Chicken
  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • Huli Huli Sauce
  • 1 cup pineapple juice
  • ½ cup soy sauce (low sodium recommended)
  • ½ cup brown sugar
  • ¼ cup ketchup
  • ¼ cup honey
  • 2 tablespoons rice vinegar (or apple cider vinegar)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • For Thickening (Optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Make the sauce
    In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, honey, vinegar, garlic, ginger, sesame oil, black pepper, and red pepper flakes.
  2. Add to slow cooker
    Place chicken in the crock pot and pour sauce over the top, turning to coat.
  3. Cook
    Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender and cooked through.
  4. Thicken the sauce (optional but recommended)
    Remove chicken and set aside. Pour sauce into a saucepan and bring to a simmer. Stir in cornstarch slurry and cook until thickened, 2–3 minutes.
  5. Finish & serve
    Return chicken to the sauce or brush thickened sauce over chicken before serving.

Notes

  • For shredded chicken: Shred directly in the crock pot during the last 30 minutes.
  • For caramelized edges: Broil chicken 2–3 minutes after slow cooking, brushing with sauce.
  • Make it gluten-free: Use tamari or coconut aminos.
