Ingredients
- 4 boneless, skinless chicken breasts, diced
- 2 medium zucchini, sliced into half-moons
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Salt and black pepper, to taste
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan
- Optional: cherry tomatoes or red pepper flakes
Instructions
- Preheat oven to 400°F (205°C). Lightly grease a baking dish.
- Add chicken and zucchini to the dish. Drizzle with olive oil and season with Italian seasoning, garlic powder, salt, and pepper. Toss to coat.
- Bake uncovered for 20 minutes.
- Sprinkle mozzarella and Parmesan evenly over the top.
- Return to oven and bake 10–15 minutes until chicken is cooked through and cheese is melted and lightly golden.
