Ingredients

  • Grilled Chickpeas & Veggies:
  • 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • ½ red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Pitas & Toppings:
  • 4 pita breads
  • ½ cup hummus or tzatziki
  • ½ cup cherry tomatoes, halved
  • ¼ cup crumbled feta cheese (optional)
  • Fresh parsley or cilantro, chopped

Instructions

  1. Preheat a grill pan or outdoor grill to medium-high heat.
  2. In a large bowl, toss chickpeas, bell pepper, zucchini, and red onion with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper.
  3. Grill vegetables and chickpeas in a grill basket or on skewers for 8–10 minutes, turning occasionally, until lightly charred.
  4. Warm pita breads on the grill for 30–60 seconds per side.
  5. Spread hummus or tzatziki inside each pita.
  6. Fill with grilled chickpea veggie mixture.
  7. Top with tomatoes, feta, and fresh herbs.
  8. Serve warm.

Notes

  • No grill? Roast everything at 425°F (220°C) for 20 minutes instead.
  • Add harissa or chili sauce for heat.
  • Make it vegan by skipping feta or using dairy-free sauce.
  • Works beautifully in wraps or bowls, too.
