Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 12 oz uncooked pasta (penne, rotini, or shells)
  • ¾ cup freshly grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional)
  • ½ cup chopped spinach or parsley (optional)

Instructions

  1. Cook the Chicken
    Heat olive oil in a large deep skillet or pot over medium-high heat. Add chicken, salt, pepper, Italian seasoning, and garlic powder. Cook 5–6 minutes until lightly browned. Remove and set aside.
  2. Build the Sauce Base
    In the same pot, add minced garlic and sauté for 30 seconds until fragrant.
  3. Add Liquids & Pasta
    Pour in chicken broth and heavy cream. Stir to combine, then add uncooked pasta.
  4. Simmer
    Bring to a gentle boil, then reduce heat to medium-low. Cover and simmer 12–15 minutes, stirring occasionally, until pasta is tender and sauce thickens.
  5. Finish the Dish
    Stir in cooked chicken, Parmesan cheese, and red pepper flakes. Simmer 2–3 minutes until creamy and fully combined.
  6. Serve
    Remove from heat and garnish with spinach or parsley if desired. Serve hot.
