Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup grated Parmesan cheese
  • ½ cup Italian-style breadcrumbs or panko
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 2 large eggs
  • 2 tablespoons olive oil or melted butter
  • Optional garnish: fresh parsley, chopped
  • Optional serving: lemon wedges

Instructions

  1. Preheat oven to 400°F (205°C). Lightly grease or line a baking sheet with parchment paper.
  2. Pound chicken breasts to an even thickness and season lightly with salt and pepper.
  3. In a shallow bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
  4. In another bowl, whisk the eggs.
  5. Dip each chicken breast into the eggs, then press firmly into the Parmesan breadcrumb mixture until well coated.
  6. Place chicken on the baking sheet and drizzle with olive oil or melted butter.
  7. Bake for 20–25 minutes, or until the coating is golden and the chicken reaches an internal temperature of 165°F (74°C).
  8. For extra crispiness, broil for the last 1–2 minutes.
  9. Garnish with parsley and serve with lemon wedges if desired.
