Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then mix in lemon zest, lemon juice, and vanilla.
- Alternately add dry ingredients and buttermilk, beginning and ending with dry ingredients. Mix just until combined.
- Add pink food coloring a little at a time until desired color is reached.
- Divide batter evenly between pans and smooth tops.
- Bake for 28–32 minutes, or until a toothpick inserted comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat butter until smooth. Gradually add powdered sugar, then mix in lemonade concentrate, lemon juice, and salt until fluffy.
- Frost the cooled cake layers, stack, and decorate as desired.
