Ingredients

  • 3–4 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 6 hoagie rolls or French rolls
  • 6 slices provolone or Swiss cheese
  • Fresh parsley (optional garnish)

Instructions

  1. Sear the Beef (Optional but Recommended):
    Heat olive oil in a skillet over medium-high heat. Sear chuck roast on both sides until browned (about 3–4 minutes per side).
  2. Prepare Slow Cooker:
    Place sliced onions and garlic in the bottom of the slow cooker. Add the seared roast on top.
  3. Add Liquid and Seasoning:
    Pour in beef broth, Worcestershire sauce, soy sauce, thyme, and black pepper.
  4. Cook:
    Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
  5. Shred the Beef:
    Remove roast and shred with two forks. Return shredded beef to the slow cooker and let it soak in the juices for 15–20 minutes.
  6. Assemble Sandwiches:
    Toast rolls lightly. Fill with shredded beef and top with cheese. Broil for 1–2 minutes until cheese melts.
  7. Serve:
    Strain some of the cooking liquid into small bowls for dipping (au jus). Serve warm.
