Ingredients

- 4 cups fresh spinach (or 1 cup frozen, thawed & drained)
- 1 cup sour cream
- 1 (10.5 oz) can cream of chicken soup
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup crushed Ritz crackers or breadcrumbs
- 2 tbsp melted butter
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Heat olive oil in a skillet over medium heat. Sauté onion 2–3 minutes; add garlic and seasoning.
- Add spinach and cook just until wilted.
- In a bowl, mix chicken, spinach mixture, sour cream, soup, mozzarella, and Parmesan.
- Spread mixture evenly in baking dish.
- Combine crackers with melted butter and sprinkle over top.
- Bake uncovered 30–35 minutes until bubbly and golden. Rest 5 minutes before serving.
