Ingredients

  • Chicken
  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika (optional)
  • Filling
  • 1 cup fresh spinach, chopped
  • ½ cup sundried tomatoes, drained and chopped
  • ¾ cup shredded mozzarella or provolone
  • ¼ cup grated Parmesan
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the filling:
    Heat 1 tbsp olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add spinach and cook just until wilted. Remove from heat and stir in sundried tomatoes, mozzarella, Parmesan, salt, and pepper. Set aside.
  3. Prepare the chicken:
    Pat chicken breasts dry. Carefully cut a pocket into the side of each breast, being careful not to cut all the way through.
  4. Stuff the chicken:
    Spoon the filling evenly into each chicken breast. Secure with toothpicks if needed.
  5. Season:
    Rub the outside of each breast with olive oil, salt, pepper, garlic powder, and paprika.
  6. Bake:
    Place chicken in a lightly greased baking dish. Bake uncovered for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
  7. Rest and serve:
    Let chicken rest for 5 minutes before serving. Remove toothpicks if used.

  • Cheese swaps: Cream cheese or feta can be used for a richer, tangier filling.
  • Extra flavor: Add crushed red pepper flakes or Italian seasoning to the filling.
