Sweet Potato Gnocchi

This Sweet Potato Gnocchi is soft, pillowy, and full of cozy flavor. Made with naturally sweet, tender potatoes, the gnocchi have a delicate texture that pairs beautifully with butter, sage, or a light cream sauce.

Ingredients

  • 2 medium sweet potatoes (about 1 lb / 450 g)
  • 1½–2 cups all-purpose flour, plus more for dusting
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg (optional)
  • ¼ teaspoon black pepper
  • Optional for serving:
  • Butter, sage, garlic, Parmesan cheese, or your favorite sauce

Instructions

  1. Cook the Sweet Potatoes
    Bake sweet potatoes at 400°F (205°C) for 45–50 minutes until very tender, or microwave until soft. Let cool slightly, then peel and mash until smooth.
  2. Make the Dough
    On a floured surface, spread mashed sweet potatoes. Sprinkle with salt, pepper, and nutmeg. Add egg and gently mix. Gradually add flour, mixing just until a soft dough forms. Do not overwork.
  3. Shape the Gnocchi
    Divide dough into 4 portions. Roll each into a rope about ¾-inch thick. Cut into 1-inch pieces. Roll over a fork if desired for ridges.
  4. Cook the Gnocchi
    Bring a large pot of salted water to a gentle boil. Add gnocchi in batches. When they float to the surface, cook for 1–2 more minutes, then remove with a slotted spoon.
  5. Serve
    Toss immediately with sauce or sauté briefly in butter for a lightly crisp exterior.

Notes

  • Use as little flour as possible to keep gnocchi tender.
  • If dough feels sticky, dust lightly with flour rather than mixing more in.
  • Gnocchi can be frozen uncooked on a baking sheet, then stored up to 2 months.
  • Delicious with brown butter sage, cream sauce, or garlic olive oil.
  • For gluten-free, substitute a 1:1 gluten-free flour blend.
